José González has developed a project for the design and installation of a Lotus central monoblock kitchen + fryers + tilting frying pan in the prestigious Urpí hotel in Sabadell.
Characterized by offering a menu of traditional Catalan cuisine, the hotel restaurant has the capacity to serve 350 guests.
For this, a central monoblock kitchen has been equipped with built-in elements: four-burner stove, fry-top and bain-marie with different Gastronorm tanks. This central unit is equipped with neutral lower furniture, consisting of open surfaces and support feet with door. Complementing this central module, 2 Lotus Line 90 fryers have also been installed; one with a double 25L tank and the other with a single 25L tank. This combination of fryers is ideal for kitchens like this one, where a large number of diners have to be catered for in a short time, handling different foods for frying without mixing them. In addition, a modular set from Lotus line 90 is equipped with a tilting frying pan, two gas burners and neutral worktop tops. The tilting frying pan is a very useful element in high-performance kitchens, since it allows cooking large quantities of food at the same time, and its versatility means that it can be used for different purposes, such as stewing, boiling or frying.
